Spiked Cucumber Lemonade

Summer seems to fight its demise by torturing us with weather so hot and humid that crisp fall weather seems to be an impossible dream.  Hot muggy nights just call for a sparkling, crisp drink like Spiked Cucumber Lemonade.  Keep the cucumber infused gin and club soda in the refrigerator so your drink will be extra cold.  Mmmmm, a perfect foil to those hot nights!  This might be my new favorite!  File this one under refreshing!


For the cucumber infused gin:

3 thinly sliced cucumbers

2 bottles of Toms Town Botanical Gin

Add all ingredients to a large glass jar or sealable container.  Refrigerate for two days, shaking occasionally to encourage the infusion.  After 2 days strain the gin and pour it into the original bottles or sealable glass container.  This recipe can easily be halved.

For each cocktail:

1 part gin

1 part lemon juice

1 part simple syrup

3 parts soda water

Pour over ice and garnish with thin cucumber slices.
